Features

The asparagus is a perennial vegetable. The only edible part is the shoots, which have a particularly delicate flavour and grow from underground rootstock. The shoots may be green, white or violet in colour. When they are fresh, the colour is bright, the flesh is firm and crisp and the shoot breaks without bending, while the tip is straight and firmly closed.
